CHOCO CASHEW PIE CUPCAKES 🥧🧁 The fudgiest chocolaty cupcake, stuffed with our cashew pies 🤤 and topped with a cashew butter frosting! The perfect weekend bake. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 6 INGREDIENTS (makes 12) CUPCAKE 115g cashew/almond butter (1/2 cup) 40g coconut oil (3 tbsp) 195ml plant milk (3/4 cup + 1 tbsp) 160g almond flour (1 + 1/2 cups) 120g oat flour (1 + 1/8 cup) 200ml agave syrup (3/4 cup + 1.5 tbsp) 15g cacao power (1/4 cup) 6 packets of @PRISPUDDINGS Pecan pies ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ CASHEW BUTTER FROSTING 180g cashew butter (3/4 cup) 6 tbsp agave or maple syrup 6 tbsp coconut oil (melted) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ METHOD 1. Preheat the oven to 180C 2. For the sponge, melt the coconut oil and combine with all wet ingredients 3. Stir in the dry ingredients until you reach a smooth consistency. Pour the batter into 12 pudding moulds or muffin cases until 1/2 full 4. Fill each case with 1 cashew pie and cover with remaining batter 5. Bake at 180C for 18 to 20 minutes 6. For the frosting, melt the coconut oil and stir together with all ingredients until smooth and creamy. CHOC PEANUT BUTTER JELLY CUP ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6 ingredient delicious PBJ CUPS. Super quick and easy treat for one. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS Chocolate - 50g chocolate, 5g coconut oil Peanut butter - 1 tbsp peanut butter, 2g agave syrup (1/4 tsp) Raspberry jam - 2 tbsp frozen raspberries, 1 tsp agave syrup, 1 tsp chia seeds ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ METHOD 1. Line a silicone muffin cup into your muffin tray 2.Melt the chocolate and coconut oil and fill half the mixture in a silicone muffin cup, brush the chocolate up the sides. Freeze for 5 minutes. 3.Combine the peanut butter and agave syrup, scoop it into the base and spread flat 4.For the jam, melt the raspberries in the microwave or in a saucepan and crush with a fork, stir in the agave and chia seeds. Juicy medjool dates stuffed with nut butter and covered in white chocolate. This sticky date and nut butter combination is MELT IN YOUR MOUTH HEAVEN. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 8 medjool dates 4 tbsp Peanut butter @picspeanutbutter Handul Roasted salted peanuts (no skin) 100g vegan white chocolate @ichoc_vegan_chocolate ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ METHOD 1. Remove the pit from inside the dates by slicing vertically through the middle (don't go all the way through) 2. Drizzle 1 tsp of peanut butter inside each date 3. Stuff the dates with peanuts 4. Heat up the chocolate until melted and drizzle over the dates, then freeze for 20 minutes 6.
